Are DW stands worth the extra money over Tama? They have some cool extra features, but are they necessary, something that'll you'll ever really need?

Also, if I were to get a Tama double tom stand, would it fit my Pacifics, or do I have to stay within DW? I'm not quite sure on the sizes.

In my opinion, no, the DW hardware is not worth the price over the Tama hardware. The Tama Roadpro hardware is extremely good for the money.

As for your Pacifics, what type of tom holders do they have? If it's the L-arm type, the Tama stand should work fine, but you might want to double check the L-arm diameters.
