Yeah all of them if your technique is good enough to ensure you dont damage the heads. I use a drum stick on my tabla and that probably the most fragile head of any drum. Just be careful! Oh... why would you want to play a conga with a stick it wouldnt sounds nice at all?

There are various percussion instruments that has to be struck with sticks, but these are sticks without tips. eg: doun-doun _________________

Conga's can be played with sticks, djembe's not really...tis possible but it's goat skin, not cow (like conga) so I really wouldn't recommend it...
A sabar is a traditional Senegalise drum, shaped like a djembe that with played with a stick and a hand (though the stick is quite light)...
